4 ways to get your daily nuts, including a homemade granola recipe

Here are four ways to get your daily nuts:

  • As a healthy snack between meals
  • As a topping for your salad or stir fry. Have a look at the Nuts for Life website for ideas
  • As nut butter. Did you know that peanuts are technically a legume, growing below the ground? They are highly nutritious, but almond and cashew butters are a great alternative.
  • In a quick morning granola. See my recipe below.

Susan's Granola Recipe

  • Select your favourite nuts and seeds and chop roughly.
  • Melt a teaspoon of oil (I use coconut) in a frying pan and add to the pan, stirring for a few minutes over medium heat until lightly browned.
  • Add a teaspoon of maple syrup and stir until the nuts and seeds are coated and sticky. You can add some spices such as cinnamon, nutmeg, cardamom or ginger for extra flavour.
  • Serve with berries, banana or chopped dried fruit such as dates, figs or prunes and a dollop of yoghurt.

A note on nut storage

Nuts For Life recommends storing your nuts and nut butters in the fridge. Remove nuts from the plastic packaging and store in an airtight container for up to four months. Alternatively, they will keep in the freezer for six months. Just bring them back to room temperature for eating.

Don’t forget you can avoid the plastic packaging by shopping at local bulk food stores, such as Thirroul's Flame Tree Co-op, The Source, and Nut and Deli in Wollongong.
