This recipe for a delicious coconut chickpea curry has been kindly shared by EVE & Co.
Serves 8
Ingredients
25g garlic
15g ginger
15g long red chilli
150g brown onion
100ml coconut oil
1/2 teaspoon cinnamon
2 teaspoons paprika
3 teaspoons garam marsala
1 teaspoon cardamon
2 teaspoons cumin powder
2 teaspoons turmeric
200g tomato paste
3 tablespoons lemon juice
2 teaspoons salt
500g coconut cream
500g potatoes (chopped into small chunks)
350g carrots (chopped into small chunks)
520g tinned chickpeas
Method
- Chop onions, garlic, ginger and chilli by hand or in food processor, then saute in heavy based saucepan with coconut oil until soft
- Boil potatoes and carrots separately until soft
- Put the remaining ingredients in pot and heat through. Be sure not to overcook as potato and carrot will get soft
