Looking for a quick and simple recipe that’s full of flavour? Try this bruschetta from Cook Chill Chat’s budget-friendly cookbook Connecting Over Food. It’s a much-loved, classic Italian starter, made with fresh tomato, red onion and a hint of garlic and basil.
Prep: 5 to 15 mins | Cooking: 15 mins | Cost: $1.20 per person | Serves 4 people
Ingredients
- 8 slices of day-old bread e.g breadstick or sourdough
- 2 tbsp vegetable oil
- 4 tomatoes
- ½ red onion
- ½ cup fresh basil leaves
- 2 cloves garlic
- 2 tbsp balsamic vinegar
Method
- Preheat the oven to 220°C and line an oven tray with baking paper.
- Slice bread and brush or spray with oil and bake for approximately 3-5 minutes.
- Chop tomatoes, dice onion, shred basil and mince garlic. Combine all ingredients and vinegar in a medium bowl.
- Top toasted bread with the mixture.
Serve and enjoy it on its own or as a side.
