Classic bruschetta that's full of flavour

Looking for a quick and simple recipe that’s full of flavour? Try this bruschetta from Cook Chill Chat’s budget-friendly cookbook Connecting Over Food. It’s a much-loved, classic Italian starter, made with fresh tomato, red onion and a hint of garlic and basil.

Prep: 5 to 15 mins | Cooking: 15 mins | Cost: $1.20 per person | Serves 4 people

Ingredients

  • 8 slices of day-old bread e.g breadstick or sourdough
  • 2 tbsp vegetable oil
  • 4 tomatoes
  • ½ red onion
  • ½ cup fresh basil leaves
  • 2 cloves garlic
  • 2 tbsp balsamic vinegar

Method

  1. Preheat the oven to 220°C and line an oven tray with baking paper.
  2. Slice bread and brush or spray with oil and bake for approximately 3-5 minutes.
  3. Chop tomatoes, dice onion, shred basil and mince garlic. Combine all ingredients and vinegar in a medium bowl.
  4. Top toasted bread with the mixture.

Serve and enjoy it on its own or as a side.
