JJ's Indian shares recipe for Chana Masala

Thanks to Pritpal Singh Saini for sharing this recipe. Pritpal is the director at JJ's Indian restaurant who has organised the street food alley at this weekend's Kiamasala.


Chana means chickpea. Chana Masala is a very popular curry in the Indian sub-continent. This version is the one most found in Indian households.

Ingredients:

  • 2 cups chickpeas soaked in water for at least 8 hours
  • ¼ tsp salt
  • 1/2 tsp turmeric
  • Pinch hing (an Indian spice that can be substituted with garlic and onion powder)
  • 2 green cardamon pods
  • ¼ tbsp cumin seed
  • 1 cup chopped onions
  • Chopped green chilli to taste
  • ½ tsp each of chilli powder, cumin powder
  • 2 tsps coriander powder
  • 1 tsp Garan masala or MDH Chana Masala
  • Fresh coriander and squeeze lemon to serve

Method:

Step 1:

Wash and rinse the chickpeas and cook in a pressure cooker with approx. five cups water.and ¼ tspn salt and turmeric Cook for 3-4 whistles.

Step 2:

Heat 1 tbspn oil in a separate pot, once oil is hot add a pinch of Hing, 2 green cardamon pods and ¼ tbspn cumin seed.
Once they start cracking then add 1 cup chopped onions and sauté until golden brown. (At same time you can some chopped green chilli if you want to make it spicy.)

Step 3:

Add the following and saute for a couple of mins:

  • ½ tsp each of Kashmiri chilli powder, turmeric powder, cumin powder
  • 2 tsp coriander powder
  • 1 tsp Garam masala or you can use MDH chana masala

Step 4:

Once you smell the beautiful aroma add the chickpeas and boil on low temp for 10-15 mins

Add fresh coriander and a squeeze of lemon to serve.
