Make Portuguese Custard Tarts

There's nothing like food to bring people together. MCCI runs a fantastic program that brings together young and old – high school students and senior community members – at an annual event called the Cook-Off.
Each year the Cook-Off program not only generates good food and goodwill, it also produces a series of cookbooks.
The recipe below comes thanks to Team Portugal at Lake Illawarra High School in the 2022 Cook-Off.
Ingredients
- 1 litre milk
- 12 egg yolks
- 250 g white sugar
- 4 tbsp plain white flour
- (heaped)
- 2 tsp vanilla essence
- 2 lemon peels
- 6 puff pastry sheets
Method
1 Preheat the oven to 200°C
2 Combine milk with sugar, lemon peel and vanilla
3 Add flour slowly, mix well with a whisk and bring to boil
4 When it starts to boil, turn off the heat and add egg yolks one by one, and
mix well
5 Prepare a muffin tray by spraying with cooking oil
6 Cut pastry sheet to size and fill with 3/4 custard mixture
7 Bake in the oven at 200ºC until lightly browned
