Last week 30 trained permies gathered at the Mt Keira Girl Guide Camp to learn about teaching others the art and science of permaculture. I met them and heard some inspirational stories at their end-of-training celebration dinner.

The Illawarra is a hot bed of permies. Jacqui Besgrove from Earthrise Permaculture hosted the Permaculture Teacher Training. I also met Aaron Sorensen from Elemental Permaculture who, with Daniel Deighton, has been instrumental in the development of 22 Living Classrooms between Coledale and Nowra, including at Tarrawanna Public School.

This week I give a short explanation of permaculture and provide links to follow if you want to learn more.

The recipe today comes courtesy of local recipe developer and food photographer Krystal Manning. She shares her recipe for tahini miso granola. I also profile the ingredient miso, a Japanese paste that has multiple uses, both sweet and savoury, and is good for our gut health.
