PREP: 25 mins | Cooking: 10-15 mins | Cost: $1.60 per person
Serves 4 people
Ingredients
- 60 g Vermicelli rice noodles
- 1 ⅓ mixed vegetables (raw) capscium, cucumber, snow peas, avocado, carrot
- 1 bunch fresh herbs e.g mint or coriander
- 1 cup of lettuce leaves
- 1 cup of your preferred protein (chicken breast or tofu)
- 2 tsp oyster sauce
- 2 tsp reduced salt soy sauce
- 2 Tbsp lemon juice
- 1 Tbsp vegetable Oil
- 12 Rice paper sheets
- 2 Tbsp sweet chilli sauce (optional)
Method
- Cook noodles according to the packet instructions, drain and set aside.
- Grate mixed vegetables or cut into matchstick, coarsely chop herbs and shred salad leaves.
- Meat: Slice chicken into thin strips and marinate in a bowl with oyster sauce, soy sauce and lemon juice.
Vegetarian: Slice tofu into thin strips and marinate in a bowl with oyster sauce, soy sauce and lemon juice. - Fill a bowl with warm water.
- To assemble the rolls, place a rice paper sheet into the warm water until just soft. Remove and place onto a plate.
- Place some noodles, vegetables, herbs and chicken or tofu on the edge of the rice paper.
- Fold up the bottom then fold into the sides then roll towards the remaining open edge.
- Repeat steps 6-8 with the remaining rice paper sheets and ingredients.
Serve and enjoy the roll on its own or with sweet chilli dipping sauce.
