Here's my recipe for roast tomato sauce – it is better than a bought one.
Ingredients
- 2kg tomatoes, cut in quarters lengthways
- 1kg onions, cut in eighths
- 6 cloves garlic, unpeeled
- rosemary, thyme (optional)
- olive oil
- salt, pepper
- fresh basil
Method
Place the tomatoes, onions and garlic in a large roasting pan (or two) and drizzle liberally with olive oil.
Lightly salt and pepper (you can always add extra later) and mix altogether with rosemary and thyme.
Bake in a moderate oven (180˚C) for 1 hour, mixing at the 30-minute mark, until everything is browning nicely.
Remove from the oven and allow to cool. Mix in fresh basil leaves.
Freeze as is in chunky portions or puree and freeze.
