Ricotta is one of the easiest of the cheeses to make at home, with little equipment required. Read more about the process in my article, Let's talk about ricotta.
Here's a 'ricotta like' recipe to try.
Ingredients
- 1L whole milk, fresh
- 180ml cream
- 1 level teaspoon salt
- 30ml lemon juice
Method
Gently mix the milk, cream, salt and lemon juice. Bring slowly to 90˚C. Do not disturb.
Turn off the heat and rest for 15 minutes. Gently ladle the curds into a ricotta basket and drain until it reaches your desired consistency.
Eat warm or refrigerate.
Use the whey (find suggestions here) within a week or freeze for later.
