Did you know that cauliflower, blitzed in a food processor, makes a great substitute for rice?
We are still seeing the best of citrus, with a variety of oranges including navel, navelina, cara cara and blood, mandarins including daisy and imperial, grapefruit, lemons and limes. Apples are still good. The word is, though, that this is the worst strawberry season for many years.
Leafy greens are becoming more plentiful and coming down in price as are beans and broccoli. Caulis are good quality and good value. Eggplants are egg-sellent! Zucchinis are still expensive. Keep an eye out for the start of the asparagus season.
Cauliflower rice
Did you know that cauliflower, blitzed in a food processor, makes a great substitute for rice?
While cauliflower is cheap and in season, use it to make a fried rice as a meal on its own or as an accompaniment to a stir fry. It's low carb and high fibre.
Simply put some raw florets into the bowl of a food processor and pulse until it resembles rice. It will only need a few seconds. Do not puree!
To make a fried rice, fry onion, garlic and ginger in your preferred oil until fragrant but not too brown. Add veggies of your choice – eg small florets of broccoli or broccolini, frozen peas, corn kernels, finely diced carrots – and fry until softened. Add the bllitzed cauliflower, mix together and fry for a couple more minutes. Finally, add flavourings, for example, light soy or kecap manis (sweet soy). Add salt, pepper and green onions or coriander.
As an alternative, add chopped fresh herbs and a squeeze of lemon to your fried blitzed cauliflower. Top with toasted almonds.
