The flavours of Italy are headed to your table with the opening of a new homestyle Italian pasta business in Calderwood called Mastro & Co.
The home-based business is expected to open its doors in mid-April, offering ready-made meals for pickup.
Home cook Simona and husband Bruno say the business was born out of a desire to bring the authentic Italian, home cooked meals they grew up with to the wider community.
“We cook these meals for our own family and friends now and we are always asked to share the recipes,” Simona says.
Using the Italian cooking philosophy of less is more, Simona intends to nourish her customers’ tastebuds through quality ingredients and simple techniques that deliver vibrant flavours.
The menu will initially include three pasta dishes that customers can order by phone/text or social media three days each week, from Wednesday to Friday.
Delicious sauces will be created from scratch, says Simona, using only the best Italian products and as many locally sourced ingredients as possible, with fresh herbs picked from their own garden.
These sauces will include Sugo Napoletana – classic simple ingredients big flavour; Ragù alla Bolognese; Creamy Boscaiola.
There will be three styles of pasta to choose from: spaghetti, penne and fusilli. While Simona won’t be making the pasta herself, she has chosen a premium pasta brand in ‘La Molisana’ for her dishes.
"Pasta choice has to be thoughtful as it holds the sauce,” she says.
Cooking will change with the seasons to take in locally available fresh ingredients.
Simona has a strong Italian heritage to draw from, with Italian grandparents who migrated to Australia in the 1950s, while her husband Bruno migrated here from Italy 19 years ago.
Simona was an Italian teacher in local schools prior to opening the business but was searching for another way to showcase Italian culture to the greater community. It didn’t take long to land on the idea of food and sharing her sought-after recipes, so she set about developing her own Italian brand – Mastro & Co.
